since you found your way to this page, i wanted to share a couple comfort meal recipes with you
these are on constant rotation in my home and are probably gonna be my go-to safe foods until i’m in the ground
enjoy :)
scallion boxed mac & cheese
ingredients:
1 box of macaroni and cheese (i like the annie’s white cheddar shells the most, but you do you)
3-4 small green onions/scallions
a handful (or two) shredded cheddar
2 tbsp neutral cooking oil
sesame seeds (optional)
steps:
divide white/light green & dark green parts of scallions. cut white/light green parts into 1-inch pieces, and julienne green parts. if you’re not great with a knife, cut them however you like; sometimes, i’ll cut them at an angle for fun plating
boil a pot of water and cook the macaroni according to box instructions
while the mac is boiling, heat neutral oil in a saucepan on medium heat. sauté white parts of scallions until lightly browned and fragrant. add cheese powder packet from the box, plus shredded cheese. spoon about 4 tbsp of your pasta water into the saucepan to thin out the sauce; add more if sauce is still too thick
drain macaroni, and add to saucepan. mix until your pasta is evenly coated with your cheese sauce
garnish with dark green parts of scallions and sesame seeds
hot & spicy wrap
ingredients:
1 flour tortilla (can sub for bagels, rolls, croissants, etc.)
2 eggs (can sub for vegan egg; i like to use the frozen justegg folded eggs)
1 frozen hash brown patty (can sub for tater tots in a pinch)
3 slices of pepper jack cheese
a few dashes of your choice of hot sauce
2 tbsp olive oil
special equipment:
panini press (optional)
steps:
heat olive oil in a saucepan on medium
place the pepper jack slices diagonally across the middle of the flour tortilla, pointed side facing out; think of it like an argyle pattern on your tortilla. add hot sauce on top of cheese. if using a different base (bagel, roll, etc.), cut in half and pan-fry in olive oil, then add hot sauce, and put cheese slice on eggs
fry hash browns on both sides until golden brown. place on your prepared tortilla and crush up with whatever utensil you’ve used to flip your hash browns. they should mix in with the hot sauce during this step
make your eggs, to your taste (scrambled, fried, etc.). when i use the justegg frozen eggs, i’ll fry those up at the same time as the hash browns; when i use real eggs, i’ll scramble them. add eggs on top of hash browns
roll up your tortilla. if using a panini press, cook your wrap until you get that classic panini browning; if you don’t have a panini press, you can pan-fry your wrap on both sides
cut on a diagonal (deli style) and enjoy
